Rubbed Flank Steak with Horsehradish Cream
     
PREP TIME: 30 minutes COOKING TIME: 24 hr marinade plus 15 mins. SERVES: 6
     
Ingedients:
 
Steak:
    1 (1 1/2 lb) flank steak
    1/4 cup rye or bourbon whiskey
    2 TBS low-sodium soy sauce
Horseradish Cream:
    1/3 cup plain fat-free yogurt
    2 TBS prepared horseradish
    1 tsp Dijon mustard
    1 large garlic clove, minced
Rub:
    1 TBS sugar
    1 TBS paprika
    1 TBS chili powder
    1 1/2 tsp black pepper
    1 tsp garlic powder
    1/8 tsp salt
    cooking spray
 
Directions:
 
Steak: Prepare steak by trimming fat and placing in a large zip-lock bag with whiskey and soy sauce. Marinate in refigerator for 24 hours, turning occasionally.
Horseradish cream: Combine yogurt, horseradish, mustard, and garlic. Cover and chill.
Rub: Combine sugar and next five ingredients (sugar through salt). Remove staek from bag; discard marinade. Rub sugar mixture over steak, chill 30 minutes.
Place staek on grill or broiler rack coated with cooking spray.
Cook 8 minutes on each side or until desired doneness.
Cut steak diagonally and serve with horseradish cream.
